Vegetable Gold Coin
  • 8-10 Bread slices
  • 4-5 Potatoes boiled and mashed
  • ½ cup diced Carrot
  • 2-3 chopped Green chillies
  • ½ cup diced Capsicum
  • 1tbsp chopped Ginger
  • ½ cup crushed Corn kernels
  • 1 tsp Pepper powder
  • 2tbsp Maida
  • 2tbsp finely chopped Coriander
  • Oil for frying
  • Salt as per taste

Take a chopping board and with the help of a round cutter, cut the bread slices into roundels.
Take a big mixing bowl and add the boiled and mashed potatoes.
Add the carrot, green chillies, capsicum, ginger, crushed corn kernels, pepper powder, coriander and salt.
Mix well with the help of a spatula.
Make a thick slurry of maida with a little water.
Take a bread roundel, top it with about 1 tbsp of the mixture and spread it evenly.
Using a brush, apply maida slurry on the roundel and coat it evenly on the mixture.
Seal the edges properly with the slurry to avoid scattering in the oil.
Heat oil for frying.
Keeping the masala portion on top and gently leave the coins in the hot oil.
Keep putting hot oil on top of the coin, with the help of a spatula, to cook the slurry part too. Do not flip the vegetable coins.
Take them off when the round bread at the bottom turns golden brown.
Use kitchen towels to drain off the excess oils.
Garnish with tomato sauce and chilli sauce.
