INGREDIENTS
For Manchurian Balls
- 1 ½ cup Cabbage finely chopped
- 1 cup Carrot finely chopped
- 1/2 cup French Beans finely chopped
- 1/4 cups Onion greens finely chopped
- 1 tbsp grated Ginger
- 1 tbsp Garlic, finely chopped
- 1 tbsp Red chilly sauce
- 1 tsp Soy sauce
- 1 tsp finely chopped green Chillies
- 1 tbsp Butter
- 1 tsp black Pepper powder
- Salt (according to taste)
- 2 tbsp Maida
- 3 tbsp Cornflour
For Manchurian Gravy
- 2 tbsp Oil
- 1/2 cup chopped Onions
- 2 tbsp finely chopped Garlic
- 1 tbsp finely chopped Ginger
- 1 tsp finely chopped green chillies
- 1 tbsp Coriander stem
- 3 tbsp Shezwan chutney
- 5 tbsp Tomato sauce
- 1 tsp Soy sauce
- 1 tsp Vinegar
- 2 tbsp Red chilly sauce
- 1 tsp Pepper powder
- 1 tbsp Cornflour
- Salt (According to taste)
For Fried Rice Noodles
- 1 cup boiled Noodles..
- 1 ½ cups boiled Rice
- 2 tbsp Oil
- 1/2 cup finely chopped Onions
- 1 tbsp finely chopped Garlic
- 1 tbsp finely chopped Ginger
- 1 tbsp finely chopped Green Chillies
- 1/2 cup tiny diced French Beans
- 1/2 cup tiny diced Carrots
- 2 tbsp Tomato sauce
- 2 tbsp Shezwan chutney
- 1 tsp Soy sauce
- 1/2 tsp Vinegar
- 1/2 tsp White pepper powder
- 1/4 cup Green onions
- Salt (According to taste)
- Fried noodles (for garnish)
METHOD
For Manchurian Balls
Take a big mixing bowl
Add the cabbage,carrot,french beans,onion green,ginger,garlic,green chillies,chilly sauce,soy sauce,butter,salt,pepper powder and mix well.
Add the maida and cornflour and mix well, until the mixture comes together.
If required,you can add a tbsp of maida and cornflour more to get the mixture together.
Shape them into balls and keep it aside.
Take a pan with oil on heat for frying.
Fry the balls on medium heat until golden brown.
Keep them aside.
For Manchurian Gravy
Take a pan on heat.
Add the oil and allow it to heat
Add the ginger garlic and green chillies
Saute for a few sec.
Add the onions and cook on low heat until translucent
Add the coriander stem and saute
Add the shezwan chutney,tomato sauce,soy sauce,vinegar and red chilly sauce,mix thoroughly.
Add around ½ lts. of water.
Let it come to a boil.
Add a slury (cornflour+1/2 cup water).
Add the slurry by keep stirring the sauce.
Allow it to come to a boil.
Add pepper powder ,salt and mix well.
Add the Manchurian balls.
Take off the heat.
For Fried Rice Noodles
Take a wok on heat
Add the oil and heat it well
Add the garlic ginger and green chillies
Saute for a min
Add the onions and saute well
Add the French beans and carrot,mix well
Cook on high heat for 2 mins
Add tomato ketchup,shezwan chutney,soy sauce,vinegar,pepper powder and salt.
Stir well and cook for 2 mins on high heat.
Add the cooked rice and noodles.
Stir well for 2 to 3 mins.
Add the spring onions and stir well.
Remove from heat.
Serve the Manchurian balls with gravy and fried rice noodles as a one-pot meal or separately.
Garnish with spring onions and fried noodles.
